A salute to the sun ... ... aka:
ode to the Canaries ,
time again knoblaucht potatoes or
it very :)
As you have noticed so maybe I was end of November with a very dear friend in Lanzarote. As well as sun and relaxation, I smuggled a classic national dish to Germany!
... aaalright, the sun has turned the road in snow, but you can not have everything:)
When brought national dish is the
papas arrugadas , translated "wrinkly" - The name says it all and can not be taken literally, as you will see continued) In addition there is like
Mojo verde and / or
Mojo rojo - Sauces similar to the Italian pesto (the / the / the pesto? ... hmmm).
The
papas arrugadas are easily made and require little attention, so I did it gladly.
Take a large pot and the desired amount of potatoes - the best relatively small! The cover potatoes with water and clean sea salt, add. A pinch here would be dosed quite wrong, as indeed do end up with a light salt crust have:) I'm sure I brought along Canarian sea salt taken each other's doing but surely!
Yes, and actually say's now simply boil until the water has evaporated, stirring from time to time (especially towards the end), so that the salt can be nice to put the potatoes.
consuming something, but not really complicated, are the sauces, which I would like to present the classic red and green variety.
I admit that I have brought with me from holiday the finished versions that you can also see in the picture (the classic tourist-souvenir), I've gotten but also to the homemade version I tried and it tastes even better than top, and above all fresh and the garlic is more variable in intensity!
Here in short, everything that goes into the mojo rojo. Built from the information on the mitbebrachten glasses, the Internet and personal taste:)
tomato, red pepper, red pepper, garlic, sea salt, olive oil, red pepper powder.
tomato, red pepper, chili and remove seeds in the blender! Note: Chilis vary in sharpness, rather start slowly and add little by little. Depending on the desired consistency, add olive oil and season with salt and paprika. If the sauce
too thin can be thickened with white bread crumbs. Otherwise, I just threw everything together and looked to see what comes out at. The result was delicious, but the certain thing is still missing ..
similar approach in the Mojo verde, but with the following ingredients:
green peppers, green chili, cilantro, parsley, garlic, sea salt, olive oil, red pepper powder.
The taste difference would lie on my lack of cumin and the fact that in the original English were processed pimientos, which have been replaced with me through and chili peppers ...
